Banana Coconut Bread


Banana Coconut Bread
(recipe adapted & modify slightly from Cuisine Paradise)

Ingredients:
3 large eggs
120g ripe bananas, mashed
3 Tbsp maple syrup
40g coconut oil
1 Tbsp rum
1/4 cup coconut flour
pinch of salt
1/4 cup chopped pecans
20g ground almonds

Method:
1. Mix eggs, maple syrup, coconut oil & rum in a medium mixing bowl.
2. Sift in coconut flour & salt. Mix till combined.
3. Stir in mashed bananas & pecans. Pour batter into prepared tin & topped with some bananas & pecans.
4. Bake in a preheated oven @ 170C for 35mins.

喜欢香蕉和椰子油的香味。山核桃和杏仁粒也增添了咬劲和喉感。健康又好吃!

Coconut Cupcakes


Coconut Cupcakes 
yields 6 cupcakes
(recipe adapted from here)

Ingredients: 
1/4 cup coconut flour
1/8 tsp salt
1/8 tsp  baking soda
3 eggs
1/4 cup coconut oil
2 Tbsp honey

Fillings
lemon curd 

toppingslemon curd
sweetened coconut flakes 

Method:
1. In a food processor, pulse all ingredients together till thoroughly combined.
2. Using an ice cream scoop, scoop batter into cupcake pan 1/2 filled, put some lemon curd in the centre & topped with more batter.
3. Bake at preheated oven at 180C for 15mins.
4. After cupcakes are cooled, add a tsp of lemon curd on top of cupcake & sprinkled with coconut flakes.

Cranberry Chia Seed Muffins


Cranberry Chia Seeed Muffins

Ingredients:  
1/4 cup coconut flour
1/4 tsp salt

1/4 tsp baking soda
3 large eggs
70g honey 

60g coconut oil
1 orange zest
1 Tbsp chia seeds

1/3 cup dried cranberries

Method: 
1. In a mixing bowl, whisk together coconut flour, salt & baking soda.
2. Add in eggs, honey, coconut oil, orange zest, cranberries & chia seeds.
3. Divide batter into lined muffin cups.
4. Bake in a preheated oven at 180° for 18mins.


 Verdict: Soft & fluffy muffin with a refreshing orange taste with sweet cranberries

Egg-Free Macaroons

 

Egg-Free Macaroons

Ingredients: 
1.5 cups coconut flakes
1 Tbsp coconut flour
1/8 tsp salt
3 Tbsp coconut oil
50g honey

Method:
1. In a mixing bowl, combine coconut flakes, flour, salt, oil & honey till well mixed.
2. Using a small ice cream scoop, Scoop batter onto a silpat mat.
3. Bake at preheated oven at 180C for 10mins.

Coconut Flour Cut-Out Cookies

 

Coconut Flour Cut-Out Cookies
(recipe adapted from here)

Ingredients: 
3/4 cup coconut flour
1/4 cup honey
2 & 3/4 Tbsp butter (I omit) 
5 Tbsp melted coconut oil
1/2 mashed banana 
2 eggs 
1/4 tsp salt 

Method:  

1. Combine all ingredients in a large mixing bowl & mix well till a soft dough is formed. 

2. Roll out the dough on the parchment paper sprinkled with some coconut flour until it is about 1/4 inch thick.  

3. Use your cookie cutters to cut the dough into desired shapes & placed them on silpat mat. 

4. Lightly brush each cookie with coconut oil. Baked in a preheated oven @ 170C for 15mins.

   

Verdict: My kitchen is filled with coconut aroma when these cookies were baking in the oven. These cookies browned relatively fast due to the honey. They tasted really great, with a strong coconut taste & a tinge of banana. The cookies were soft & goes well with a cup of milk for afternoon snack! Try this recipe if you have coconut flour in your kitchen *^_^*

Chocolate Donuts


Chocolate Donuts

Ingredients:  
1/4 cup coconut flour
1/4 cup cocoa powder
1/4 tsp salt
1/4 tsp baking soda
4 eggs
1/2 cup coconut oil
1/4 cup honey

Method:
1. In a mixing bowl, slightly whisk flour, cocoa powder, baking soda & salt till combined.

2. In another bowl, whisk eggs, coconut oil & honey together.

3. Pour wet ingredients (2) into dry ingredients (1) & mix till combined.

4. Fill doughnut mould with batter.
 Bake at preheated oven at 180C for 10mins.

Coconut Flour Waffles


Coconut Flour Waffles
(recipe adapted from here)
makes 4 waffles

Ingredients: 
3 eggs
50g sugar
1 Tbsp coconut oil 
1/2 cup coconut flour 
1/4 tsp baking powder 
1/4 tsp baking soda 
Pinch of salt  
1/2 cup chocolate milk 

Method:
1. In a bowl, mix eggs, sugar & coconut oil. 

 2. Add coconut flour, baking powder, soda & pinch of salt.
  

 3. Add in milk. Whisk until the batter is smooth.
 

4. Preheat the waffle maker. Brush oil on the waffle iron & scoop the batter in. 
Close the lid & wait until it is ready to open. 

*Be very careful during the removal of waffles from maker. The texture of the waffles are extremely delicate so they rip easily. 

Verdict: We love the waffles very much. They smell & taste heavenly due to the coconut flour & oil added. Waffles are soft & rip easily, goes well with some almond butter spread.

Coconut Flour Chocolate Chip Cookies

I am very excited as this is my first time working with coconut flour & coconut oil. I love the natural strong coconut smell when mixing the cookie batter & the aroma in my kitchen when they are baked in the oven! These yummy little cookies are crispy on the edges & little soft in the middle. Simply perfect for breakfast or afternoon tea with a cup of milk/tea (I paired them with a glass of matcha marshmallow soymilk).

Some information about Coconut flour & Coconut Oil:
Coconut flour is grain free,  gluten-free, high in protein & fiber. It serves as an alternative to traditional wheat flours & is a great option for anyone who has specific dietary restrictions. Coconut flour is extremely absorbent so there is a need to decrease the amount of flour used & increase the amount of eggs/liquid when a recipe calls for when using coconut flour.

Coconut oil is the oil content extracted from coconut kernel. It is great for baking, stir-frys or as a dairy free replacement to butter. Do read about everyday uses for coconut oil here. The benefits of coconut oil are just too amazing! 

I guess I should switch to coconut oil for my cooking & baking in future. Do give them a try. I am sure you will love them as much as I do =)

Coconut Flour Chocolate Chip Cookies  
(recipe adapted here)   


Ingredients
1/3 cup coconut flour
¼ cup melted coconut oil
¼ cup brown sugar
1 tsp rum
¼ tsp salt
2 eggs
1/3 cup dark chocolate chips
 

Method:  
1. Combine coconut flour, coconut oil, brown sugar, rum, salt & eggs together in a medium mixing bowl. Mix until you have a nice thick cookie batter.

2. Add in chocolate chips. Stir until combined.

3. Using a small cookie scoop, scoop the dough onto silpat mat. (This batter does not spread out in the oven like a traditional cookie batter, so be sure to flatten the cookie out a bit with your fingers/palm).

4. Bake in a preheated oven @ 180C for 14mins.
 Enjoy!
