Sticky Date Cake
Ingredients:
125g pitted dates, chopped
1/2 tsp baking soda
160g boiling water
125g Liv butter, softened
70g brown sugar
1 tsp Cointreau
1 egg
1 cup plain flour
1 tsp baking powder
Method:
1. Place dates & bicarbonate of
soda in a heatproof bowl. Pour over boiling water. Allow to stand,
uncovered, for 10mins until dates are tender.
2. Using an electric mixer, beat butter,
sugar &Cointreau until pale & creamy. Add egg & beat
well. Using a spatula, stir in date
mixture & flour. Mix until well combined.
3. Spoon mixture into silicon moulds. Bake for
15mins.
