Pandan Butter Cake


Pandan Butter Cake   
(Recipe adapted from Anncoo

Ingredients:
180g Liv unsalted butter

80g sugar
2 eggs
1/2 Tbsp pandan paste
35g soya milk
220g plain flour
1 tsp baking powder

Method:

1. Cream butter & sugar together until light & fluffy. Add in eggs till combined.
2. Sieve in flour, baking powder, soya milk & pandan paste. Fold the mixture gently with a spatula.
3. Spoon into cupcake liners & bake in a preheated oven @ 160C for 20mins.

Onion Sausage Focaccia

Ingredients:
200g bread flour
100g plain flour
1/2 tsp yeast
20g oil
1 big onion, diced, sautee till brown slightly
180ml water 
*Direct method

Toppings:
Sausages
Parsely
Garlic tomato paste

Rich Chocolate Chiffon

 

Rich Chocolate Chiffon  
(recipe adapted & modify slightly from Nasi Lemak Lover)

Ingredients:
3 egg yolks 
40g corn oil  
60g milk  
30g chocolate chips + 30g cinnamon chips
15g cocoa powder  
1/4 tsp baking soda  
35g plain flour

3 egg whites
 
50g sugar

Method:
1. Melt chocolate & cinnamon chips in a microwave. Add in milk & combine well, set aside.  
2. Whisk egg yolk & oil, stir well.  
3. Add in melted chocolate mixture & stir well.  
4. Add in flour, baking soda & cocoa powder. Mix well.  
5. Beat egg white till foamy, gradually add in sugar & beat till soft peak.  
6. Use a hand whisk, fold 1/3 egg white into egg yolk batter, stir well.  
7. Fold in the balance egg white, combine well.  
8. Pour batter into the prepared cupcake liners. Bake in a pre-heated oven @ 160C for 20mins.

Custard Powder Cookies

 
I am not sure if this is a successful or failed attempt of custard powder cookies. My end product looked so different from 'My Cookbook'. I swear I followed the recipe step by step but why is my cookie dough so sticky? I can't roll them into small balls at all & they spread like wild fire during baking =P Anyway, I am glad that they still turn out to be very yummy. Phew.... thank god, I don't have to feed the cookies to 'Mr Dustbin' =)
Custard Powder Cookies
(recipe adapted from here)
 

Ingredients:
1 cup plain flour
1/4 cup custard powder
1/4 tsp baking powder
1/4 tsp baking soda
1/2 cup sugar
1/2 cup oil
a pinch of salt
 

Method:
1. Sift together the flour, custard powder, baking powder, soda & salt. keep aside.
2. In another bowl, mix together the oil & sugar.
3. Pour the oil mixture into the flour mixture & combine to form a smooth dough.
4. Use teaspoon to scoop & drop the soft dough onto a silpat mat.
5. Bake in a preheated oven @ 180C for 14mins.

 See how thin the cookies were! They tasted awesome & were really addictive ~ melt in your mouth

I love Buttercake

Buttercake 
(Recipe adapted & modify slightly from Kevin Chai)

Ingredients:
250g Liv salted butter, soften
180g sugar
240g eggs
250g plain flour
1 tsp baking powder
100g milk
1 Tbsp Rum
Peanut butter chips

Method:
1. Beat butter & sugar till creamy. Add in Rum & eggs slowly till combined.
2. Add in flour mixture & alternate with milk. Mix till well combined.
3. Fold in peanut butter chips.
4. Bake in a preheated oven at 160C for 60mins.
