Matcha Cheesecake


Matcha Cheesecake 

Ingredients:
crust:

180g cookies crumbs
50g Cowhead salted butter, melted

 

Fillings:
330g Cream cheese
40g fine sugar

1 Tbsp corn flour
2 eggs
50g milk
40g non dairy cream

100g matcha chocolate, melted
 
Method:
1. Mix cookie crumbs & melted butter in a mixing bowl. Pour into a 6" tin & level it. Chill in fridge for later use. 
2. Beat cream cheese & sugar till light & fluffy. Add in eggs gradually & beat till combined.
3. Add in corn flour, milk, cream & chocolate, Mix well.
4. Pour batter into the cake tin. Steamed bake in a preheated oven @160C for 70mins.

Pandan Chiffon (cooking method)

这是我吃过的最好吃的班兰戚风!不夸张,没骗你。
这个戚风蛋糕体真的是鬆软到可以做瑜伽,忍不住要小心翼翼地捧在手心。
一口一口吃到班兰和椰奶的香,太棒了!

Pandan Chiffon (cooking method)
(recipe adapted from Wen's Delight)

Ingredients:
5 egg yolk
70g coconut milk
40g pandan juice
(Blend fresh pandan leave with water, cover & chill in the fridge overnight)
50g Cowhead salted butter
90g Blue Jacket Plain Flour

5 egg whites
80g fine sugar

Method:
1. Cook coconut milk, butter & pandan juice together till butter melted. Add in sifted flour & mix well. Add in egg yolks slowly & mix well, set aside.
2. Whisk egg whites till foamy. Add in sugar & whisk till stiff.
3. Add in 1/3 meringue into the cooked dough & fold well.
4. Pour this mixture back to the balance meringue & fold well till the mixture is well mix.
5. Pour into a chiffon tin. Bake in a preheated @160C for 50mins.

Kuromitsu Bread Rolls


Kuromitsu Bread Rolls
(recipe adapted from Carol Hu)

Ingredients:
250g Blue Jacket Bread Flour
50g Blue Jacket plain Flour
3/4 tsp instant yeast
40g brown sugar (I use kuromitsu)
180ml water
1 Tbsp chia seeds
15g Cowhead salted butter

Method:
1. Put all ingredients (except butter) into a mixer fitted with a dough hook & knead till a dough is formed. Add in butter & knead till the dough is smooth & elastic. Proof for 1 hr.

2. De-gas the dough & divide into 9 portions. Roll each dough into a 'tear drop' shape & roll out the dough using a rolling pin. Roll each dough up like a swiss roll & placed on a silpat mat. Proof for 1hr.

3. Bake in a preheated oven @ 180C for 12mins.

Moist Chocolate Cake


Moist Chocolate Cake
(recipe adapted from Table for 2)

Ingredients:
2 cups Blue Jacket plain Flour
2 cups fine sugar
3/4 cup cocoa powder
2 tsp baking soda
2 eggs
1 tsp salt
1 cup oil
1 cup boiling water
1 cup buttermilk (I use 1 cup non dairy whip cream + 1 Tbsp lemon juice)
2 tsp rum

Fillings:
non dairy whip cream
Hershey's chocolate syrup
ready to eat chestnuts

Method:
1. Place all ingredients in a mixer & whisk till batter is smooth.
2. Pour into prepared tray.
3. Baked in a preheated oven @160 for 30mins.

Honey cake

这个蛋糕很鬆软。很喜欢它带有淡淡的柠檬和肉桂香。
我就这样败给了它,不知不觉,一块一块地往嘴里塞,消灭了它。

Honey Cake
(recipe adapted from Anncoo) 

Ingredients:
200g Blue Jacket Plain Flour
3/4 tsp baking powder
1/2 tsp baking soda
1/2 tsp cinnamon powder 
1/2 tsp salt 
2 large eggs        
70g fine sugar
75g honey (I use kuromitsu)
100g fresh milk 
85g vegetable oil 
zest from 1 lemon 

Method: 
1. Sift flour, baking powder, baking soda, cinnamon powder & salt together into a bowl. Add lemon zest & mix well. Set aside for later use.
2. Whisk eggs & sugar on high speed until pale & thick.
3. In a measuring cup, combine honey, milk & oil together, Mix well & slowly add into egg mixture at low speed until combined.
4. Add in flour mixture & mix until smooth. Pour batter into a 6" pan.
5. Bake in a preheated oven @ 160C for abt 35mins.

Almond Chiffon Cake


Almond Chiffon Cake
(recipe adapted from Anncoo)

Ingredients:
100g Blue Jacket Plain flour 
2 Tbsp ground almond
5 egg yolks
50g canola oil
100ml Cowhead UHT milk + 1 Tbsp almond powder

Meringue
50g Sugar
5 egg whites

Almond flakes

Method: 
1. Combine yolks, oil & milk in a bowl, mix well. Add sifted flour mixture & mix till combined.
2. Beat egg whites until foamy & slowly add sugar until egg whites are glossy & stiff peaks.
3. Gradually pour all the egg mixture into the meringue at low speed then stop machine. Using a rubber spatula and fold mixture well.
4. Sprinkle almond flakes at the base of chiffon tin. Pour batter evenly into the tin.
5. Bake in a pre-heated oven 160C for 45mins.

Bearie Buns

熊熊面包

Ingredients:
Hoji cha dough:
50g Blue Jacket Baguette Flour
50g Blue Jacket Wholemeal Flour
1 Tbsp Hoji cha powder
10g fine sugar
pinch of salt
10g coconut oil
1/4 tsp instant yeast
30g eggs
55g whip cream 

Beetroot dough:
50g Blue Jacket Baguette Flour
50g Blue Jacket Wholemeal Flour
1 Tbsp Beetroot powder
10g fine sugar
pinch of salt
10g coconut oil
1/4 tsp instant yeast
30g eggs
55g whip cream

Method:
1. Put all hojicha dough ingredients in a mixing bowl. Mix till combined. Cover with a cloth & proof for 30mins. Repeat the same for beetroot dough in another mixing bowl.
2. After 30mins, wet hands slightly & fold the dough corners towards the center of the dough. Proof for another 30mins. Repeat this process for another 2 times (there will be a total of 3 times folding in 2 hrs). Repeat the whole procedure for beetroot dough also.
3. Remove hojicha dough onto a slightly floured table top. Divide 55g x2 (head), 30g x2 (body), 4g x12 (ears, hands & feet). Repeat for beetroot dough. Assemble the doughs to form a bear & proof for 1hr.
4. Bake in a preheated oven @ 170 for 12mins.
