Crispy Baked Cod Fish with Seaweed


Ingredients:
1 packet  Dried Fish Fillet
Seaweed 
1 egg white

Method:
1. Place the cod fish slices on a lined baking tray.
2. Brush some egg white on cod fish slices & stick the seaweed on it.
3. Bake at preheated oven @ 150C for 10mins on one side & bake for another 5mins on the other side.

上海生煎包

Ingredients: 
Bao skin 
300g plain flour
1/2 tsp yeast
10g sugar
1/8 tsp salt
170g water
20g oil 

Fillings 
300g  minced meat
1 packet spring onions
1 Tbsp soy sauce
2 Tbsp sesame oil
white & black pepper

Famous Amos Double Chocolate Chips Cookies

Famous Amos Double Chocolate Chips Cookies
(Recipe adapted & modify from I Love. I Cook. I Bake)
 
Ingredients:
150g butter
100g sugar
30g brown sugar
1 egg
220g plain flour
50g corn flour
1 tsp vanilla essence
1 tsp baking soda
1/2 tsp salt
100g walnut 
50g chocolate chips
30g cocoa powder

Method:
1. Sieve flour, corn flour, cocoa powder & baking soda together, set aside.
2. Cream butter with sugar & brown sugar till creamy.
3. Add in egg & mix well.
4. Add in salt & vanilla essence.
5. Fold in the sieved flour till it forms dough & mix in the walnut & chocolate chips.
6. Spoon & drop the dough onto a lined baking pan.
7. Bake in preheat oven at 180 degree for 20 mins

黑胡椒葱肉酥饼


黑胡椒葱肉酥饼

(Recipe adapted & modify from Carol)  

Ingredients: 
Filling
300g pork 
150g spring onions

seasonings- 1.5 Tsp soya sauce, 1/2 tsp salt, 1 Tbsp sugar, 1 Tbsp sesame oil, black & white pepper 

Pastry skin
Water dough
200g plain flour
1/3tsp yeast
1 tsp sugar
10g oil
120g water  
*In a large mixing bowl, add all ingredients together to form a soft dough. Let dough rest for 1hr & cover with plastic wrap. Divide the dough into 40g each.


Oily dough
60g plain flour
20g oil 
*Mix oil into flour. Continue to knead to form a dough that is pliable. Divide the dough into 10g each.

1. Roll the water dough flat & place oil dough inside, cover & seal the edges. Roll out again into long flat oval & start rolling in from one end like a swiss roll. Cover let rest for 15mins. Repeat again after 15mins.

2. Using rolling pin, roll out the dough into rounds. Place 1 heaping Tbsp of the filling in middle of the dough followed by spring onions. Seal up the dough.

3. Bake in a preheated oven @ 180degrees for 25mins.

Hidden Heart Bread

Valentine's Day is just round the corner, so I decided to include my 'heart' in my bread. Perfect to let my hubby know that his breakfast is made with love! Hahaha! *^_^*

Hidden Heart Bread 
 
Ingredients  
Pink hearts:
75g butter
70g sugar
1 egg
70g flour
1/2 tsp baking powder
25g ground almonds
25g milk
1 tsp strawberry powder
drop of red colouring 
*Creaming in method 

Bread dough:
250g bread flour
40g plain flour
10g yam powder
10g okara
1 egg
1 tsp yeast
120g soya milk (made using Joyoung maker)
30g shortening
*Using direct method

Coconut Cookies

Coconut Cookies 
(Recipe adapted & modify from My Kitchen Snippets)

Ingredients:  

280g plain flour
10g cornstarch
70g dessicated coconut
180g salted Liv butter
130g sugar
½ tsp vanilla 

Method:
1. In a mixing bowl, sift flour & cornstarch together & set it aside. Mix in dessicated coconut. Line two baking sheet with some parchment paper.

2. Cream butter & sugar until well combined & light. Add in the vanilla & mix well. Fold in the flour mixture & mix well.

3. Roll the cookie dough into a small balls & arrange on the baking sheet, Bake in a preheated oven @ 180 degrees for 20mins. Cool down completely before storing it in airtight containers.
