Cocoa Sweet Potato Swiss Roll
Cocoa Sweet Potato Swiss Roll
(Recipe adapted & modify from 孟老师的美味蛋糕卷)
Swiss roll:
Ingredients:
(A)
20g melted butter
(B)
60g almond powder
30g icing sugar
120g whole egg
(C)
150g egg whites
50g castor sugar
(D)
40g plain flour
10g cocoa powder
Method:
1. Whisk ingredients (B) together & mix until smooth.
2. In another bowl, beat eggs whites until soft peaks. Add sugar slowly & continue beating until egg whites are nearly stiff.
3. Fold 1/3 of egg whites mixture into (1). Add the rest of the egg whites & fold gently to obtain a smooth batter.
4. Sift in (D) & mix until smooth & well combined.
5. Add in (A) & mix till well combined.
6. Pour batter in & bake @ 180 deg C for 15mins.
Sweet Potato fillings:
Ingredients:
250g sweet potato (steamed & mashed)
20g icing sugar
30g butter, softened
30g whipping cream
Method:
1. Mix all ingredients together till combined.

This is a very interesting swiss roll with sweet potato filling. Your swiss roll is well rolled up - must be very nice too.

HI Cathy, what is the size of your tray using. Btw, what is the size of the oven using?..Sandy

ReplyDeleteMy tray size is 11 x 14". My oven is 60 x 60cm.
I think your tray is normal and standard one. Mine oven cannot fir this size, so I bought 9x11 tray, small lor...not easy to roll..any comment? Sandy

Very interesting combination I have to say. Although both chocolate and sweet potatoes are my favorite, I've yet combined the two together. ....considering I have that book too, heehee.

Kathy, I see all these good looking swiss roll and I want to try my hands on it but before I start I already feel defeated. You guys set the standard SO high lor! :( I think I will try make one tomorrow and if I don't get swiss roll, I will do the rock and roll myself! hehe
