巧克力雪球
巧克力雪球
(recipe adapted & modify slightly from youtube)
Ingredients:
40g unsalted butter, soften
120g icing sugar
few drops vanilla oil
65g egg
135g Blue Jacket Cake Flour
35g cocoa powder
1/4 tsp baking soda
extra icing sugar
Method:
1. Cream butter & sugar together till slightly pale. Add in vanilla oil & egg & whisk till combined.
2. Sift in flour, cocoa powder & baking soda. Mix till a soft dough is formed.
3. Put the dough in a plastic bag & chill in fridge for 2hours.
4. Divide dough into 15g each & coat with icing sugar. Arrange the balls onto a tray lined with silpat mat.
5. Bake in a preheated oven @160C for 30mins.

Matcha Red Bean Buns
Bread
Ingredients:
Pre-ferment
100g Blue Jacket Bread Flour
1/4 tsp instant yeast
100g water
Main dough
215g Blue Jacket Bread Flour
10g matcha powder
100g water
15g fine sugar
1/2 tsp salt
12g unsalted butter
Fillings:
red bean paste
Method:
1. Pre-ferment: mix all ingredients together in a bowl. Cling wrap & leave in room temperature for 5hrs.
2. Put all ingredients (except butter) & pre-ferment into mixer & knead till a dough is formed. Add in butter & knead till the dough is soft & elastic. Check for window pane. Proof for 1hr.
3. De-gas the dough & divide into 6 bigger portions (55g each) & 12 smaller portions (20g each). Rest the dough for 15mins.
4. Roll each dough flat & wrap filling. For flower buns, wrap 40g fillings & donut buns, wrap 10g fillings. Proof for 1.5hrs.
5. Baked in a preheated oven @ 170C for 12mins.

Dumplings
Dumplings
Ingredients:
1 cup Blue Jacket Plain Flour
1/2 tsp salt
65g water
3g natural blue powder

Method:
1. Mix all ingredients (except blue powder)
together in a medium bowl. Knead till a rough dough is formed. Divide dough
into 2 & add in blue powder into one dough. Knead both dough till smooth.
Rest dough for 30mins.
2. Roll both dough into long cylindrical
roll & divide into 20 pieces. Roll out dough & wrap fillings as
desired.
3. Heat up a pan with some oil over medium
heat. Placed the dumplings in & pan fried till the bottom of the buns are
slightly brownish in color. Pour some water into the pan. Cover the pan with
lid & turn on medium heat. After 6mins, open the lid & sprinkle sesame
seeds & spring onion.
