Healthy Popsicles


Strawberry & blueberry Yoghurt Popsicles

Ingredients:
10 Tbsp low fat plain yoghurt  
6 big strawberries / half punnet of blueberries
NuNaturals orange NuStevia 
*Blend all ingredients together till smooth & pour into popsicle moulds. Fridge at least 4hrs.

Chai Tow Kway 菜头粿


Chai Tow Kway 菜头粿 

Ingredients:
1 grated radish
Chinese mushrooms, soaked & diced
Chinese sausages, remove plastic wrap & diced
Dried shrimps, soaked
500g rice flour
2 Tbsp cornflour
water
salt
Oil 

Method:
1. Mix rice flour, corn flour, water & salt.  Set aside.
2. Stir fry the Chinese mushrooms, sausages & dried shrimps to release their aroma.
3. Add grated radish & 1/2 cup water.  Cover wok & simmer for 5mins.
4. Pour in rice flour solution & stir until mixture thickens.
5. Pour into a greased steaming pan, smooth the top with an oiled spatula & steam on high heat for 45mins.

Oreo Cheesecake


Oreo Cheesecake
(recipe adapted & modify slightly from Anncoo)

Ingredients:
Base
150g Oreo cookies, crush finely
80g melted butter 
*Mix crushed Oreo cookies with butter & press them firmly on the base of the prepared pan. Chill in the refrigerator for later use. 

Cream Cheese filling:
250g Cream cheese

70g Sugar
3 Eggs
1 Tbsp Rum
120ml non dairy cream
3 Tbsp plain flour, sifted

70g Oreo cookies, break into quarters

Ganache:
100g cream
100g chocolates

Method:
 
1. Beat cream cheese & sugar until smooth & creamy. 
2. Add in non dairy cream & rum, mix well. 
3. Add eggs, one at a time, beating after each just until blended. Add flour into it & mix well.
4. Add in Oreo cookies & fold in with a rubber spatula. Pour into prepared baking pan.
5. Bake at pre-heated oven @ 150C for 30mins.

Carrot Cake Brazilian Style


Carrot Cake Brazilian Style
(Recipe adapted & modify from Nasi Lemak Lover)

Ingredients: 
350g carrots, peeled & thinly sliced 
1 orange zest
3 eggs 
240ml corn oil 
150g sugar 
1/4 tsp salt 
250g plain flour 
1 tsp baking powder  

Method: 
1. Place the sliced carrots, eggs & oil into the bender, then process until the carrots are finely chopped. Add in sugar, zest & salt, mix till combine.
2. Add flour & baking powder, mix until well blended. 
3. Pour batter into baking pan. Baked @ 160C for 20mins.

All time favourite

My mum used to buy chocolate rice swiss roll for my sisters & I when we were younger. It costs $0.60 per piece back then. I suddenly had a craving for them recently & decide to make a roll myself.   

Chocolate Rice Swiss Roll
(Recipe adapted from Wen's Delight)

Ingredients:
20g cocoa powder
40g hot water
4 egg yolks
45g sugar
50g oil
30g milk
75g plain flour
 

4 egg whites
60g sugar


Ganache 

Chocolate rice 

Method:
1. Mix cocoa powder with hot water into a paste & set aside.
2. Use a electric hand mixer, whisk egg yolk & sugar till creamy.
3. Add in cocoa mixture (1) & mix well.
4. Add in oil & milk & mix till well incorporated. Stir in sifted flour & set aside.
5. In another mixing bowl, whisk egg white till foamy. Add in sugar & whisk till stiff peak.
6. Fold 1/3 of  the egg white mixture into the egg yolk mixture (4). Then add this mixture into the balance egg white fold till well mixed.
7. Pour mixture into the prepared tray & bake in preheated oven for 12 mins.

Strawberry Butter Cake

Strawberry Butter Cake

Ingredients:
2o0g Liv salted butter

150g icing sugar
3 eggs
4 Tbsp plain yoghurt
120g plain flour
70g bread flour
50g sugar
1 tsp rum

Method:

1. Cream butter & icing sugar together until light & fluffy.
2. Add yoghurt & rum till combined.
3. Add in eggs one at a time.
4. Fold in sifted flours with spatula.
5. spoon batter into mould. Place strawberries on top.
6. Bake in a preheated oven @ 160C for 20mins.
