Mini Buns


Mini Buns ~ Curry Chicken Potato fillings
(Water Roux recipe adapted & modify from Kokken69)


Water Roux
Bread Flour 50g
Boiling water 75g

Bread Dough

Instant yeast 7g
Bread Flour 200g
Sugar 50g
Salt 1/2tsp

Milk 50g
Egg 1
Butter 30g

Chicken Curry Potato fillings

Method:
1. Mix water roux ingredients together in a bowl. Set aside to cool down.
2. Combine all ingredients together (except butter) in a mixer. Beat until a dough is formed. Proof for 1hr.
3. Beat dough again in mixer for 1min.   
4. Divide the dough into smaller dough about 50g each.
5. Wrap curry chicken potato fillings inside & proof for 1hr. 
6. Bake in a preheated oven @ 180°C for 10mins.

  4. Min, the bun in the centre is yam filling. My mum made all the fillings & asked me to wrap in bread for her. hehehe ;)

  5. At one glance, I thought the middle was an egg! My bad, lol! But the buns looks very soft, yum! Do you have the recipe for the chicken filling?

    hahaha, the fillings are made by my mum. She steamed potatoes & diced them, diced chicken & fry with curry powder only with slight seasoning.

    Hahaha, it is not an egg. It is a mini bun with yam filling. The bun has a very smooth brown surface, that's why you thought it is an egg ;)

  18. Hi, this is the first time I try this recipe but while I was doing the water roux, I remembered reading some blog advice of water roux is 1:5 ratio. May I ask why is your recipe measurement is as such?
