Kumquat Almond Tea Cakes


Kumquat Almond Tea Cakes
(Recipe adapted from Wendy)

Ingredients:
Kumquat compote
240g kumquats
120g Sugar
240g Water

1. Half kumquats & remove seeds. Cook kumquats, sugar & water into a saucepan until the kumquat looks glossy & soft. Remove 18 pcs of halves & puree the rest with some of the syrup. 

35g plain flour
50g ground almond
½ tsp baking powder
60g butter
50g caster sugar 

2 eggs
65g kumquat puree
  

poached kumquat halves 

Method:
1. Sift flour & baking powder. Mix with ground almond, set aside.
2. Cream butter & sugar until light & fluffy. 

3. Beat in eggs one by one, beating well after each addition.
4. Put in (2) in 2 additions, mixing well after each.
5. Mix in kumquat puree.
6. Divide batter equally into prepared tin & top with a kumquat half
7. Bake in a preheat oven @ 180 degrees for 15mins.

Chocolate Chips Cuppies


Chocolate Chips Cuppies

Ingredients:
(A)
2 eggs
100g sugar

(B)
80g oil
100g milk

(C)
150g plain flour
1 tsp baking powder
20g cocoa powder

(D)
1/2 cup white chocolate chips


Method:
1. Whisk (A) together.
2. Add in (B) & mix till combined.
3. Sift (C) & add in (2)
4. Stir in (D).
5. Bake in a preheat oven @ 170 degrees for 20mins.

 I used my leftover lemon curd butter cream to pipe the roses *^_^*

Jelly Noodles

 Its Monday again! I had a pack of agar agar powder sitting in my cupboard, so I gotta put that into good use. Tada.... see my two bowls of jelly noodles. Yes, the eggs & vegetables are made from jelly as well *^_^*

This bowl of jelly noodles is mine as I don't take any chilli ;P

My hubby's jelly noodles with chilli added! hehehe ;)

Awfully Sinful Oreo Cheesecake


Its Monday again! Time to clear my fridge to use up left over ingredients. Let's see... what should I bake? Hmm, I have some chocolate butter cream, fresh cream & vanilla cinnamon syrup. I had recently bought a box of Oreo cookies & cream cheese. Oh well, I'm making an awfully sinful Oreo cheesecake!
 
Oreo Cheesecake
(Recipe adapted & modify from Baking Library)

Ingredients:
Base
200g Oreo cookies finely ground
80g melted butter
*Mix together & pressed into an 8" tin. Chill in fridge until ready for use 


Cheesecake filling:
500g cream cheese, softened

100g chocolate butter cream
50g castor sugar
200ml sour cream (2 Tbsp lemon juice + 200ml whipping cream)
2 Tbsp vanilla cinammon syrup
3 eggs, lightly beaten
100g oreo sandwich cookies with peanut butter cream filling, coarsely chopped 


Method:
1. Beat cream cheese, chocolate butter cream & sugar until creamy.  

2. Add in eggs & beat until combined. Add in sour cream & vanilla extract till cheesecake filling is smooth.

3. Fold in the coarsely chopped cookie bits & pour filling onto biscuit base.  

4. Bake @ 150 degrees C for 1 hr 15 mins in a water bath. 

The Oreo crumbs in the middle of the cake look a bit too plain for the cake, so I added a 'Happy Birthday' cake topper (top photo) when taking photos. It does looks better =)

Can't resist this sinful cheesecake.... I am already 'sampling' it while taking these photos!

Cinnamon Vanilla Poached Pears


Cinnamon Vanilla Poached Pears
(Recipe adapted from Wendy)

Ingredients:
5 small pears
500mls water
100g sugar
1 vanilla bean, scraped out the seeds
2 Cinnamon stick 
2 Tbsp lemon juice

Method:

1. Combine everything except the pear into a small pot.
2. Peel pears, rinse & put them into the pot immediately.
3. Bring to a boil & lower to a simmer for 30mins until pears are tender. 
4. Fish out the pears & turn heat to high to reduce to about 1 cup.
5. Keep pears together with syrup & chill.

Sakura Cookies さくらクッキ

 
Sakura Cookies さくらクッキ
(Recipe adapted & modify from dailydelicious)

Ingredients:
90g salted butter
50g sugar
1 egg yolk
120g plain flour
16-20 Sakura
1 tsp vanilla extract
Super fine sugar, for sprinkle on top of the cookies

Method:
1. Soak the salted Sakura in a bowl, cover with enough water overnight to reduce the salt from the Sakura. Drain the Sakura & discard the water.
 
2.  Beat butter until soft, add in sugar & beat until light in color. Add the vanilla extract & egg yolk, beat to combine.
 
3. Pour the flour into the bowl & knead lightly until smooth.
 
4.  Roll out the cookie dough &  cut with desired cookie cutter. Put Sakura on each cookie.

5. Bake in a preheat oven @ 180 degrees for 15mins.
 
6. Sprinkle with extra sugar immediately after out from oven.
